Ingredients:
- 3-1/2 cups peeled, diced potatoes
- 2 sticks of celery sliced
- 1 or 2 carrots sliced
- 1/3 cup finely chopped onion
- 1 1/2 cup diced ham
- 3-1/4 chicken broth
- ½ t. salt
- 1 t. pepper
- 5 T. flour
- 5 T. butter
- 2 cups milk
Directions:
Combine all ingredients except for the last three into the crock pot.
You can change or add to it what you like. I love celery so I always include it. I added carrots because there were some sitting in the fridge. It depends on your family what they will like best.
Set your crock pot on high for 1 hour. The switch to low low the next 5. Continue cooking checking the tenderness of the potatoes.
When the potatoes are nice and soft melt butter in a sauce pan adding milk and flour rotating while continually stirring until thickened. Just a few minutes.
Gently add the flour mixture to the crock pot and let marry 15 minutes.
Season to taste with salt and pepper.

ReplyDeleteI wasn't kidding about making this asap (I really am!), but dumb question time: is that 3 1/4 *cups* chicken broth?! I'm assuming so, but I really suck in the kitchen, so it's probably 3 1/4 teaspoons or something. ;)
