Ingredients:
- 3-1/2 cups peeled, diced potatoes
- 2 sticks of celery sliced
- 1 or 2 carrots sliced
- 1/3 cup finely chopped onion
- 1 1/2 cup diced ham
- 3-1/4 chicken broth
- ½ t. salt
- 1 t. pepper
- 5 T. flour
- 5 T. butter
- 2 cups milk
Directions:
Combine all ingredients except for the last three into the crock pot.
You can change or add to it what you like. I love celery so I always include it. I added carrots because there were some sitting in the fridge. It depends on your family what they will like best.
Set your crock pot on high for 1 hour. The switch to low low the next 5. Continue cooking checking the tenderness of the potatoes.
When the potatoes are nice and soft melt butter in a sauce pan adding milk and flour rotating while continually stirring until thickened. Just a few minutes.
Gently add the flour mixture to the crock pot and let marry 15 minutes.
Season to taste with salt and pepper.

I wasn't kidding about making this asap (I really am!), but dumb question time: is that 3 1/4 *cups* chicken broth?! I'm assuming so, but I really suck in the kitchen, so it's probably 3 1/4 teaspoons or something. ;)
